🌹 Halwai Style Gulab Jamun Recipe 🛒 Ingredients For Jamuns: 250 gm khoya (mawa) – grated 3 tbsp maida 2 tbsp fine sooji (optional but gives structure) ¼ tsp baking soda (very little!) 2–3 tbsp milk (as needed) 1 tsp ghee Oil + little ghee for frying For Sugar Syrup: 2 cups sugar 2 cups water 4 green cardamom Few saffron strands 1 tsp rose water 1 tsp lemon juice 👩🍳 Method Step 1: Sugar Syrup (Make First) Heat sugar + water. Add cardamom & saffron. Boil 5–6 minutes till slightly sticky (1-string NOT required). Add lemon juice. Turn off flame, add rose water. Keep syrup warm. Halwai trick: Syrup must be thin and warm, not thick. Step 2: Prepare Dough Mash khoya very well until smooth (no grains). Add maida, sooji, baking soda. Add ghee. Add milk little by little to form a soft, smooth dough. Do NOT knead hard. Just mix till smooth. Rest 10 minutes. Step 3: Shape Perfect Balls Make small smooth balls. No cracks. Slightly smaller than you want — they double in size after soaking. Step 4: Fry Like a Halwai (Most Important) Heat oil + 1 tbsp ghee on low flame. Oil should be medium-low (around 140–150°C). Add balls gently. Keep flame LOW. Stir continuously for even color. Fry 8–10 minutes until deep brown (not light golden). Halwai color comes from: Slow frying Slight caramelization Patience 😌 Step 5: Soaking Put hot jamuns directly into warm syrup. Do NOT boil after adding. Let soak minimum 3–4 hours (best overnight).
